In 2023, a small bowl of khao soi — a coconut curry noodle soup from northern Thailand — became one of the most searched recipes on Google worldwide. Food writers recommended that travellers visit Chiang Mai just to try it. Chefs in London, São Paulo, and Seoul insisted that their restaurants serve it. Suddenly, a dish that most people outside Thailand had never heard of was everywhere.
