You ordered the same pizza. You used the same recipe. But something was different. Why? Here is a surprising answer: the water. Water in Naples is not as hard as water in many other cities. Softer water makes the dough lighter. The crust in Naples is not as thick as a copy made abroad. It is almost as thin as paper. That small difference changes everything.
